Fresh Mint Jelly

This is another great use for fresh mint of any variety. Have fun and get creative with this one, try using Apple Mint, Pineapple Mint, or Orange Mint instead of the traditional Spearmint or Peppermint.

To double the recipe, use 1 full bottle of Certo.

Serves: Number of jars of jelly made determined by size of jars used.

1/2 Cup fresh mint leaves of your favorite variety or mix of varieties.
1 1/4 Cup Water
2 TBsp Lemon Juice
3 Cups Sugar
1/2 Cups Certo
Green Food Color

Step by Step Instructions
  1. To mint leaves, add boiling water and lemon juice.
  2. Let stand 1 hour.
  3. Add sugar.
  4. Bring to boiling point and strain.
  5. Add Certo and green color to turn mixture to desired delicate green color.
  6. Bring to the boiling point and boil hard for 1 minute.
  7. Remove from heat and pour in jelly glasses.
